Exotic Orange Cake

I've had this recipe on my to-try list for a couple of years. The Exotic Orange Cake is the creation of pastry chef Laurent Branlard, and was graciously shared on eGullet by Fred Rowe. The layers, from bottom to top, are: honey almond cake, caramel vanilla bean cremeux, honey almond cake, orange bavaroise, Passion Fruit/Mango gelee. The cake is coated with more orange bavaroise.

Absolutely beautiful. Were you happy with the result?
I've been admiring the photos on your blog, and can't help but wish you could share a bit more details about how you make each one of these creations. But I know it takes a lot of time to write, and your pictures are in and of themselves an inspiration.

Hi astrid,

I was happy with the result, but there are two changes I'll consider next time. First, I'll reduce the amount of whipped cream in the bavaroise, so that the flavor of the orange anglaise base is not so diluted. Second, I'll probably make the cremeux a little sweeter.

I checked out your blog as well. Its great, and I've added it to my favorites. In particular, your post about photo editing echoes some of my own thoughts on the issue.
